You don’t need to purchase the cotton candy marshmallows from the store, you should try it at home and it is budget friendly. This recipe needs only a few ingredients to prepare like sugar, gelatin light corn syrup and these ingredients are easily available at the store or even in your kitchen.

Ingredients needed to prepare cotton candy marshmallows
- 2½ tablespoons of powdered gelatin that is 21 grams (3 standard packets)
- 1 cup of cold water that is 227 grams, divided (50°F)
- 1½ cups of granulated sugar that is 297 grams
- ¾ cup of light corn syrup which is equal to 234 grams
- ½ teaspoon of kosher salt
- 2 teaspoons of cotton candy flavouring that is 8 grams (2 FL drams)
- Pink and blue food colouring or what you like
- ¾ cup of powdered sugar that is 85 grams

- Kitchen Scale ( that is optional)
- Stand Mixer- which you like or use
- 9×13 Baking Pan
Step by step Instructions to make cotton candy marshmallows
- Take a bowl and bloom the gelatin with the help of a stand mixer by whisking the gelatin and half of the water. Let it stand for 8 to 10 minutes.
- Take a saucepan and set over on medium flame and whisk the remaining water, sugar, corn syrup and salt together while gelatin is blooming. Simmer it for about 6 to 8 minutes by whisking. When the mixture becomes clear, remove it from the heat.
- With the help of a whisk attachment, turn the mixer to a low speed and slowly pour into the sugar mixture. Once added, continue to whisk for a minute. Increase the speed to high for about 10 minutes or until it becomes a fluffy, white, marshmallow mixture.
- Add the cotton candy flavour into it and whisk for a few minutes. Divide the mixture of marshmallows in two separate bowls. Colour each of the divided mixture with pink and blue.
- Dust a 9×13-inch pan with the powdered sugar or flour to prevent the marshmallows from sticking. Pour the coloured marshmallow mixture into the pan one by one with alternating colours. Smooth the top with the help of spatula. Dust the remaining powdered sugar. Cover with plastic wrap and let it set for about 8-12 hours.
- Once set, remove the marshmallow from the pan and place it on a cutting board. Dust off the excess powdered sugar. Be sure to cut the marshmallows into 1-inch squares.
- Set cotton candy marshmallows in a 6 by 3 grid on a white cutting board.

The Cotton candy comes in two flavours: blue raspberry and pink vanilla. Pink vanilla cotton candy is mixed with strawberry flavour, and blue raspberry is infused with raspberry flavour. For this recipe, any cotton candy flavour or extract will create that familiar flavour.
Do not need to cook the marshmallows. Instead, the gelatin should be allowed to create firm, squishy marshmallows.
This recipe calls for a packet of powdered gelatin. You can also use gelatin sheets, substitute 4 sheets per tablespoon of gelatin powder. One packet of gelatin contains 2½ teaspoons, so use 2½ tablespoons of powder or 10 sheets of gelatin.
To prevent sugar crystallisation use corn syrup leading to grainy marshmallows with a harder, less fluffy texture more akin to Circus Peanuts.
Store the marshmallows in an airtight container at room temperature for 1 month or freeze up to 3 months.
